Paella

Paella is a typical Spanish dish made up of fluffy yellow rice and can be served with tons of different ingredients. Traditionally it is served with seafood, but there are meat alternatives. Below I have outlined the most typical recipe with information on How to Cook a Delicious Paella.

Ingredients

500 gr paella rice (or long grain rice)
1 onion
4 cloves of garlic
1 bell pepper
100 gr green beans
½ bunch of fresh flat-leave parsley
1 seafood stock
1 lemon
2 handfuls of frozen peas
2 heaped teaspoons of smoked paprika
2 L seafood stock (made with boiled water and seafood stock block)
1,5 KG of seafood mix
olive oil
salt
pepper

Instructions

If the seafood mix is frozen, get it out the same morning and rest it on a plate in your kitchen outside the fridge.

Put the rice in a big pan and add half of the seafood stock plus some salt and the paprika powder. Medium heat for about 20 min. stirring occasionally.

Meanwhile cut the onion and garlic really fine. Cut the peppers in whichever shape you prefer. Chop off the ends off the green beans and cut the parsley leaves up really fine. The parsley stock needs to be chopped as well.

Start frying the onion and garlic on a medium heat in a bit olive oil. After 3 min add the peppers and beans. After another 3 min add the peas. Add the seafood mix to the vegetables and cook for about 5 min. Now add some salt and pepper and taste the mix. Add more if you like.

Now put the mix on the side.

Check if the rice is cooked. If not let it cook for a few extra minutes. Add the rest of the stock, put the lid on and cook for another 10 min, stirring occasionally

If the rice is done you add the vegetables/seafood mix to the rice and mix it well. Taste it again, maybe you need to add some salt.

Sprinkle over the chopped parsley and a squeeze of lemon.
